On a beautiful day in mid-August, I joined the up with the Kindling Restaurant team to shoot their new menu and go on a foraging mission for fresh, seasonal ingredients.
We spent a dreamy day foraging and getting back to basics inspired by the restaurants land + sea + fire concept. Fruits, vegetables and salads picked directly from the land; fish and meat cooked lovingly over charcoal, all sourced from local Sussex marine and countrylife.
The Kindling concept is focused around food that is kind to the environment and good for the soul, with a determination of achieving minimal waste wherever possible. Its cooking embraces modern takes on traditional methods, cooking on an open wood and charcoal fire to enhance flavour profile alongside preserving and fermenting techniques to conserve the fruitful Sussex seasons.
Super seasonal and kind to the earth, the food is at once a feast for the eyes, tastebuds and the soul.
